Organic Olive Puree, is made using organic olives in brine, the so called table olives.
Table olives (Olea Europaea) are rich sources of compounds that are of interest for the expected health activities.
The most important classes of phytochemicals present in table olives are phenolics but other compounds such as Squalene, phytosterols are also present.
The main phenolic compound is Hydroxytyrosol, a powerful antioxidant, that is the result of hydrolysis of Oleuropein and Verbascoside.
